There is something about earthenware over a fire, rich nourishing ingredients bubbling away to conjure up images of warmth, sustenance and comfort. This is the tradition of the Chinese Clay Pot dishes. Enjoy this month: Braised fish head with mixed meat in soup, Braised Patagonian toothfish with bean curd sheet and three kind sauce in casserole, and Braised preserved duck and roasted goose with taro in casserole.
