White Truffle, White Magic at Le 188˚
White Truffles, the rare and ever-so-special delicacy, are making a star-performance at Le 188˚ Restaurant & Lounge this November and December.
Complemented by valuable ingredients such as giant scallop and world-class foie gras, the five white truffle dishes our talented Executive Chef Jeno Friedl has created demonstrate his workmanship as well as his innovative culinary ideas.
Combining the refreshing taste of the pan-fried scallops with the creamy and juicy cheese ravioli, Pan-fried Giant Scallop, Rocket Jus, Crème Cheese Ravioli and White Truffle promises to delight guests’ appetites at the very beginning. White Truffle Risotto, Grilled Yellow Spring Chicken, Parsley and Parmesan Chips surprises guests with a multiple layers of flavour. Cooked by truffle oil and chicken soup, the risotto is being converted into the shape of a rice burger. With a slightly-fried surface, it is crispy outside yet soft and juicy inside. This delicious risotto, accompanied by spring chicken from France and the protagonist, white truffles, tantalizes everyone’s taste buds.
White Truffle Full Moon Cake, Orange, Honey and Cocoa Crumble demonstrates the artistic idea of Chef Jeno. The full moon cake, with its appearance as a transparent crystal ball and the unique treasure – white truffle with white chocolate foam inside, allows guests to discover and savour this delicacy. Shaved white truffles are also put alongside with polenta as well as foie gras in Creamy Polenta, Poached Organic Egg, Spinach and Shaved White Truffle and Taleggio Foam, Foie Gras Carpaccio and Shaved White Truffle respectively. These five heavenly dishes specially prepared by Chef Jeno ensure guests an unprecedented dining experience.
