Dining Highlights in March
Chef Eric Heijkoop, our new Chef de Cuisine of Le 188°, has carefully crafted a series of scallop dishes as a welcome gift to gourmets. Adventurous as he is, he has shaken off the old school, and reconstructed the prime ingredient in a brand new presentation. Ever thought of paella in rolls? Or savouring scallops and tuna on a chessboard? Your eyes and taste buds won’t be bored. Available from January to March.
Chinese herbs are well-known for their high medical values and they are widely used in Chinese cuisine. Our experienced chefs will showcase how the herbs complement the seasonal dishes. A series of herbal dishes is available from February to March for gourmets' sampling.
January to March is just the right season to savour snapper. Madai, kinmedai and amadai will be flown in straight from Japan. In the 8-course set menu, you’ll find Wine Marinated Snapper, Sashimi, Grilled Amadai with Sea Urchin, Snapper Broth… The hand-made dessert, Ice Cream on Pancake in Kyohou Grape Sauce, rounds up the meal impeccably.
Great news to seafood-lovers! Seafood-themed promotion will last for three months at the dinner buffet. Palatable seafood dishes include Scampi Tartar with Caviar, Halibut Fillet with Hazelnut, Nebbiolo Sauce and Crispy Artichoke, Hot Chili Big Fish Head in Sichuan Style and more, none should be missed.
