Black truffle time…

This earthy treasure – black truffle - is turned into a sought-after diamond in the magical hands of our experienced chefs, Harbour Grand Hong Kong. His innovative dishes will be presented in the month of August 2009, at Le 188˚ Restaurant & Lounge.

The unappealing appearance of black truffles will be transformed into five matchless beauties, for the truffle-lovers. Yes, not many, just five. Enough to discover, to savour, and to share.

Appearing in different forms on the plates, black truffles bring surprises. Pan-fried Scallop, Poached Organic Egg, Parsley and Black Truffle Foam, one of chefs' favourites, blends truffles with the commonplace potatoes and cream, and turns into savoury foam which complements the pan-fried Australian scallops perfectly. Roasted Veal Cutlet, Red Mash Potato, Baby Spinach and Black Truffle Jus hides black truffles in the sauce – veal sauce plus sliced black truffles and red wine, spotlighting the juicy veal from Holland. Foie Gras Terrine, Black Truffle Ice Cream, Sichuan Pepper Brioche and Red Port Reduction demonstrates the oriental influence in this Hungarian chef’s culinary recipe. When foie gras has been well-recognized as a good combination with black truffles, our chefs convert black truffles into sugar-free ice cream, accompanied by the unexpected spicy flavour of Sichuan pepper brioche and port wine. Multiple levels of taste. The result is unexpectedly desirable.

 

Black truffles are also presented in the form of jelly and ravioli in Steamed Cod Fish, toasted Rocket, Roasted Yellow Bell Pepper, Celeriac and Black Truffle Jelly, as well as Roasted & Confit Pigeon, Globus Artichoke, Caramelized Fig and Black Truffle Ravioli respectively. Each element on a plate stages its own character, united and led by the protagonist, black truffle. Layers of flavour are manifold. They allow gourmets to feel and savour the workmanship and talents of our chefs.
